The tuna fillet is placed in a controlled environment with high humidity (85-95%) and a certain temperature (1-3 °C), where the fish is covered with a special noble mold (Penicillium nalgiovense or Aspergillus oryzae). Aging can take from 7 days to several weeks.

The mold breaks down proteins and fats, enhancing the flavor and creating a texture reminiscent of ham. As a result, the taste becomes more concentrated, nutty and meaty, with light sweet notes.
