With a lot of free time, Chinese food blogger Cai Nan created translucent fried chicken wings, preserving the original flavor and crunch.
He recreated every part of the chicken. The bone was made from collagen and gel, the meat was processed into a liquid and then restored to its structure, and then topped with a translucent, crispy coating using molecular gastronomy techniques.
