Savory Beetroot Buckwheat
Ingredients:
250 g buckwheat groats
1 medium beetroot (boiled or roasted)
1 onion
3 garlic cloves
1 tsp lemon juice

750 ml boiling water
Method:
Toast the raw buckwheat groats in a dry, preheated skillet over medium heat for 4–5 minutes, stirring constantly. Watch carefully to avoid burning—the grain should just turn lightly golden and release a nutty aroma.
Transfer the toasted buckwheat to a plate.
Peel and finely chop the onion and garlic cloves.
Heat the vegetable oil in the skillet and sauté the onion over medium heat for 4–5 minutes until translucent. Add the minced garlic and cook over low heat for another minute.
