Americans are complaining that bread is no longer bread but has turned into a dishwashing sponge—slices simply do not absorb water, and the bread itself resembles modeling clay. It turns out that manufacturers have started adding wheat gluten and calcium sulfate to increase strength and elasticity. Yet, despite these chemical additives, the product is sold as "natural."
