The process begins with the production of durable cement disks, which are strung on thick ropes and lowered into the sea. During the warm season, oyster larvae naturally attach to their rough surfaces.
Cement is used for its durability and underwater stability. When the oysters reach palm-size, the ropes are lifted, cleaned of fouling, and transferred to cleaner waters. Oysters attach to the surface only once in their lifetime, so substrate stability is essential. They feed on microscopic algae, and over two years, the sea gradually develops their shell and flavor.
