In China, some establishments serve guilinggao, a herbal jelly, with tea. It used to be made with tortoiseshell powder, but today this delicacy is made exclusively from plant ingredients.
The jelly has a rather bitter taste. The Chinese believe that the more bitter the jelly, the better and healthier it is.
