There are some fairly popular fish species sold in almost every store, but they're headless.

Hake
This predatory fish lives in the North Atlantic, Mediterranean, and Black Seas. It dives to depths of 1,000 meters, but most often lives at depths of up to 400 meters. People have long appreciated the wonderful taste of hake—juicy and tender—and they catch it in large quantities and with pleasure. Scientists have even become concerned about the declining population. If not removed from the depths, the fish can live up to 20 years and grow to an average length of 70 cm and a weight of 3 kg.
Hake feeds on other fish and squid. Its mouth is adorned with small but sharp teeth, and its eyes are large and bulging. You look at that unfriendly face on the counter and you'll lose the desire to buy it. And the head is quite large in proportion to its body.
It's a long way to transport hake from the Atlantic, so remove the head to avoid carrying unnecessary weight and to avoid shocking us, the buyers, unnecessarily.
Wolffish
Another adorable ocean creature resembles a moray eel or a snake, with a long, flattened body up to 2.5 meters long and weighing 50 kg. This fish has a gentle disposition, sitting quietly in a burrow or rocky crevice, meditating, thinking about its own business.
Suddenly a fish swims by or a crayfish slithers past. The wolffish instantly comes to life, jumps out, opens its monstrous mouth, and snap!
Chewing the shell takes just a few seconds, thanks to its powerful teeth – huge, crooked fangs and a fair number of smaller teeth. People like wolffish; they're healthy and tasty.

Halibut
Halibut is the general name for deep-sea bottom-dwelling fish of the flounder family.
The Pacific halibut surpasses all others in size, outshining its smaller relatives. It can weigh up to 400 kg and reach a length of 5 meters.
It's as if the water had flattened their bodies, crushed them with force, and then crushed them again... And suddenly, the fish's eyes popped out of their sockets from the pressure.
When halibut are still very young, they have two symmetrical eyes, like all other animals. But with age, one eye begins to gravitate toward the other, traveling across the head, moving closer to its neighbor, and stopping there. It's fun to walk together across the vast expanses!
Halibut also has large teeth. Its meat is tasty, fatty, and especially delicious when smoked. Its large head, full of eyes and fangs, is not sold commercially, so as not to harm our delicate psyche.
